Lamb is available in the fall (September/October) and sometimes in the spring. Freezer lamb is available whole. If you prefer only half, then consider splitting with a neighbor or family member. A whole lamb or half lamb is sold by the pound at $7.50 per pound hanging weight plus estimated processing fees of about $100. A whole lamb typically weighs between 40-55 lb and yields 37 to 47 lbs of meat on average, making the total cost about $7-$10 per pound for the finest, delicately flavored and tender local free-range lamb. Your lamb will be cut and packed by USDA. Final processing fees will be paid upon pick-up. It usually takes 3 weeks to receive your lamb. We ask for a $100 deposit which is deducted from your final bill.
